Azerbaijani hazelnuts appeared on the world market in the 1930s, when a full-fledged nut-processing factory was built in Zagatala (next to Gabala and Gakh districts). Ata-Baba hazelnut is an ancient hazelnut cultivar of Azerbaijan. Meaning passed on from father to son in local dialect, this particular variety is diffuse in the northern part of the country, on the southern slopes of the Caucasus Mountains, between the districts of Balakan to Gabala.

The hazelnut "Ata-Baba" is a species of flowering plant, usually, 1 to 4,2 m, and is grown as a shrub. its fruit is grown in the form of a ball and in a stalk, there are 3 to 6 or sometimes 1 to 2 hazelnuts. Its average weight of it is 2.5 grams. The crop yield is 42%, and its greasiness is 68.22%. Hazelnuts grow in September. The harvesting from each shrub is 15-16 kilograms. ln Zagatala from some shrubs which are 11 years old age collected 25 kilograms.

The hazelnuts are ripe and start falling to the ground at the end of August but harvest begins in late September. Traditionally, the trees gently shake manually, allowing the fruits to fall. Once harvested the hazelnuts are cleaned up and left to dry in the shade for about 15 days. Then the good fruits are separated by the deformed or the excessively small ones. Because of their durable shell, hazelnuts store well and were once an essential source of food during the winter. Moreover, the shells are usually used as fuel instead of firewood.
